If you’ve spend much time around Jen, you will know that she loves French Fries passionately. Her friend Sarah sent her this wonderful recipe for Zucchini Fries from the WeightWatcher’s website. Enjoy!

Olive oil
1 tsp Seasoning, italian
1½ Tbsp Flour, white
¾ tsp Salt, table
¾ cup(s) Bread crumbs, dried, plain
2 medium Zucchini, raw
2 large Egg whites

1. Preheat oven to 425ºF. Coat a baking sheet with olive oil. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl.
2. Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray.
3. Roast, turning once, until desired crispness, about 12 minutes. Yields about 8 fries per serving.
